Whole Lotta Lunch 4: Hippie Bowl
My friend Amy made this delicious bowl for me over the summer, and I’ve been craving it ever since! This is a more time intensive lunch to prep (1.5 hours, including clean up) but it was definitely worth it.
Apparently, it is fall here in LA. I’ve yet to see weatherly evidence of this, as it is still a balmy 25-30 degrees Celcius each afternoon. To encourage more autumnal energy, I made a delicious and hearty soup for lunch this week.
I am not a financial expert and I have zero training in this area, but I did have parents who talked openly about money, taught me and my brother how to be entrepreneurs, and gave us books on financial literacy when we were barely old enough to read. I’ll put it this way – my brother bought himself a boat when he was 12 years old because of the money he made from his PAPER ROUTE. We were kids who, for better or worse, knew how to save.
This week for lunch I made one of my favorite combos – tabouli, falafel, hummus and pita. My family loves Mediterranean food, so even though I grew up in Atlantic Canada, this bowl is a taste of home!
I knew I was in trouble when my husband sweetly asked what time I would be home from Spin class, and I burst into tears because the mental math required to answer his question seemed cruel and unjust. Suffice to say, I was feeling very overwhelmed, and it was taking a lot less than normal to weigh me down.
This week I made the Tahini Kale Slaw and Roasted Tamari Portobello Bowl from The Sprouted Kitchen Bowl and Spoon Cookbook. TIP: I followed the recipe for the dressing and dumped the entire bowl onto the greens/carrots. I found it to be too much dressing! Start with a little and add more to your taste. Also, this recipe easily makes enough for 4 lunches – especially if you are generous with the kale.
I recently read The Happiness Project by Gretchen Rubin and thought it was great! Although I consider myself a pretty happy person, the book gave me a lot to think about and inspired me to embark on my own Happiness Project (shared below).
I am a kindergarten teacher and the kids in my class love to play the “raise your hand if” game. At lunchtime, I often hear them asking each other questions. “Raise your hand if you like purple,” “Raise your hand if you like aliens,” “Raise your hand if you like playing this game.”
You get the point. So here’s a question for you. Raise your hand if you think organization is fun No? No one? Just me? Since this may not be your favorite thing, let’s make it more fun by playing the game.
I used to think, unequivocally, that everyone should travel. I would have said, “Go! Travel! See! Feel!” to anyone who would listen.
