Whole Lotta Lunch 7: Festive Kale Salad and Classic Glo Bars

We just celebrated American Thanksgiving… I definitely felt kale should be my main food group this week.

Notes:

The Chia Parfait and Apple Crunch recipe is delicious and straightforward (thank you to Ella for the recommendation!).  I stored it in small mason jars so I could easily grab one in the morning.  It made enough for 5-6 small servings.

The Festive Kale Salad is perfect this time of year. It is really easy to make, but for the Pecan Parmesan, you need a food processor.  I only used about half the dressing for 4 lunch-size salad servings. I also added a can of mixed beans for more protein.

The Classic Glo Bars are one of my all-time favorite recipes from Oh She Glows.  I didn’t have parchment paper, so I used tin foil (which worked fine).  These bars will stay fresh for over a week if you wrap them individually in tin foil, and then store them in a tupperware container in the fridge.

Kale

Lemon

Clementines

Pomegranate

Apples

Ginger

Dried cranberries

Sunflower seeds

Pumpkin seeds

Hazelnuts

Pecans

Sesame seeds

Hemp seeds

Chia seeds

Mini chocolate chips (optional)

Unsweetened shredded coconut

Unsweetened applesauce

Brown rice syrup

Almond butter (or peanut butter)

Apple cider vinegar

Gluten-free rolled oats

Crisp brown rice cereal

Nutritional yeast

Mixed beans (or chickpeas)

Yogurt

Almond milk

*I’m assuming you have butter or coconut oil, cinnamon, ginger spice, sea salt, vanilla, olive oil and maple syrup – but if not, add those to your list as well!
